Dinner on the fly tonight was a a big salad with chips and two dips.
Happy Taco Tuesday friends! Dinner was quick and easy beef tacos for the boys, a big bowl of guacamole (with a game changing secret ingredient ) and this simple but delicious salad bowl for me.
The details… fresh greens, black beans, bell pepper, cherry tomatoes, a big scoop of guacamole, Sietenacho chips and Siete cashew queso, mild nacho flavor. Such a simple bowl and it was perfect.
More on the guacamole… I used to struggle with the right balance of lime or lemon, tomatoes, onions, cilantro and the like, until a friend introduced us to her recipe… the Guacamole rocked our world and we never looked back! The secret to this recipe? BANANA PEPPERS?! (aka Pepperoncini) It’s a game changer. It takes away the need for so many spices, limes, lemons or onions, and adds The. Best. Flavor! Bonus: The juice from the banana peppers has some distilled vinegar and helps the guacamole from changing color and browning.
So add a little zing to your guacamole and try this 4 ingredient guacamole. All you need is avocado, tomato, cilantro and BANANA PEPPERS! And it’s SO yummy! A total crowd pleaser!

The banana peppers replace lemons, limes, onions and a whole host of other ingredients providing great flavor and helping the guacamole keep from browning. Seriously, this guacamole holds its color better than any other we've tried.

Ingredients
3 ripe avocados
½ cup jarred banana peppers, chopped
¼ cup cherry tomatoes, seeded and chopped
¼ cup cilantro, chopped
salt and pepper to taste
Instructions
With a fork gently mash 2 avocados
Mix in the peppers.
Then gently fold in the tomatoes and cilantro
Add in the third avocado and gently mash with a fork (I like to do the third avocado last so that there are some chunky avocado pieces but mix to your liking)

Holy guacamole! I just tried this guacamole recipe and it is top notch. I’ll admit, I was skeptical at first because I couldn’t understand how these flavors would come together, but they did and they do! I made it for a veggie snack plate and it was a nice switch from the usually guac recipe. I’ll definitely be making this again!
