Dinner on the fly tonight was a a big salad with chips and two dips.
Happy Taco Tuesday friends! Dinner was quick and easy beef tacos for the boys, a big bowl of guacamole (with a game changing secret ingredient ) and this simple but delicious salad bowl for me.
The details… fresh greens, black beans, bell pepper, cherry tomatoes, a big scoop of guacamole, Sietenacho chips and Siete cashew queso, mild nacho flavor. Such a simple bowl and it was perfect.

3 ripe avocados
½ cup jarred banana peppers, chopped
¼ cup cherry tomatoes, seeded and chopped
¼ cup cilantro, chopped
salt and pepper to taste
With a fork gently mash 2 avocados
Mix in the peppers.
Then gently fold in the tomatoes and cilantro
Add in the third avocado and gently mash with a fork (I like to do the third avocado last so that there are some chunky avocado pieces but mix to your liking)
