Click here for the Soup recipe from Eating Well. I used Vegetable broth instead of chicken broth, Gluten-Free baguette from Everybody Eats instead of rye bread, and GF Jules all-purpose flour. I also used an immersion blender to make it super simple to puree the soup.
Smoky, Creamy and Cozy!
Soup season is finally here! My husband and son eat soup all year round but for me, it is more seasonal. I love a soup on cooler or cold weather days to warm me up. But I really love what I refer to as Soup Season because I love the coziness of a big pot of soup on the stove and how it can easily become a meal unto itself.
Today, we tried out this Smoked Gouda and Broccoli Soup and it was a keeper! Super easy to make, it’s simply Broccoli, onion, garlic, vegetable broth and 1 cup of shredded Gouda plus simple spices like garlic, salt, pepper, smoked paprika and white wine vinegar. Topped with quick skillet croutons, it was smoky, creamy and satisfying!
