My first Gazpacho!

This recipe was the first time I had made Gazpacho and I couldn’t believe it was so easy, so light and so refreshing. It followed a long weekend of barbecues and indulgences and was so welcome.

I can’t wait to make it again with fresh veggies from our garden!

This recipe is from Vegetarian Times and is just tomatoes, onion, green pepper, cucumber, and garlic, all blended together with a touch of EVOO.
