It’s based on our Spinach, Goat Cheese & Sun-Dried Tomato Crustless Quiche but we made it with our Easy Gluten-Free Pie Crust and is it unreal!

Packed with spinach, goat cheese and sun-dried tomatoes, it is simple, savory and unbelievably delicious!

Perfect for dinner, weekend brunch or a holiday brunch!

And it reheats well so it’s perfect for meal prep or making ahead!

How to Make Gluten-Free Spinach, Goat Cheese & Sun-Dried Tomato Quiche

For the pie crust we use our Easy Gluten-Free Pie Crust.  It comes together in 20 minutes, is easy to roll and transfers easily to the pie pan.  And it can be made up to 2 days ahead of time.

You are welcome to use an already prepared, store bought pie crust.

And the filling is made with  just 6 main ingredients + spices.

The ingredients you’ll need:

gluten-free pie crust (we used our Easy Gluten-Free Pie Crust)

fresh baby spinach

goat cheese

sun dried tomatoes

yellow onion

organic eggs

whole milk

fresh rosemary

garlic

salt and pepper

Step by Step How to Make the Spinach, Goat Cheese & Sun-Dried Tomato Quiche

Gluten-Free Pie Crust

The reason we so excited about gluten-free pies (like our Apple Crumb Pie) and quiches (particularly this one!), is that we only recently developed and shared our  Easy Gluten-Free Pie Crust.

This gluten-free pie crust is everything! It is easy to make, easy to roll, doesn’t crack and tastes great!

I am linking to the recipe here on on the recipe because it has step by step instructions and photos.  And you’ll need to make the recipe twice – once for the bottom crust and one for the top… but I promise, it truly is the easiest gluten-free pie crust ever

For this recipe, we recommend partially baking it ahead of adding the quiche filling. It bakes for just 15 minutes and can be done up to several days ahead, making the quiche an easy last minute meal.

If you prefer, you could bake it in a already-prepared store bought gluten-free pie shell, but we think that once you try our gluten-free pie crust recipe, you’ll fall in love with it!

Not only is is easy to work with and tastes great, but it doesn’t crack and holds together well once baked with the quiche.

Quiche Filling

The filling comes together in 3 simple steps:

  1. First you saute the onions and spinach in a skillet.
  2. While they get tender and wilt, you mix together the eggs and mix.
  3. Then you mix together the onion/ spinach mix, the egg mix and the goat cheese and spices.

Pour into a prepared pan and bake!

That’s it!

Pro Tip: Leave aside  few pieces of spinach, onion and sun-dried tomatoes to “decorate” the top of the quiche so it looks extra pretty and festive if serving to guests.

Baking Pro Tip: To make sure the crust does not burn when baking the quiche, I cover the edges with foil.  I understand that there are actual “pie shields” that serve this purpose but I have not tried one and can’t recommend a specific one.

It bakes to perfection so that the top is just golden in parts and the center is set but still creamy and wonderful!

Best part is that it can be entirely made ahead and heats up well.

This makes it perfect for holiday entertaining, a Christmas morning breakfast or weekly meal prep so you have something nourishing and delicious on hand and at the ready.

Personally, I love having leftovers for lunch or even a second dinner!

Ingredients

  • 1 gluten-free pie crust (partially baked) Try our Easy Gluten-Free Pie Crust Recipe
  • 1 tablespoon olive oil
  • 2 -3 cloves garlic, minced minced (I use 2 if large cloves, 3 if tiny)
  • 1/2 cup yellow onion, chopped
  • 3 cups fresh spinach, packed cups
  • 5 large eggs
  • 1 cup whole milk
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 4 ounces goat cheese, crumbled or chopped
  • 1 tablespoon fresh rosemary, chopped
  • salt & pepper to taste

Instructions

Preheat oven to 350 degrees F , and make sure you have already prepared your gluten-free pie crust whether using our recipe or a store bought one.

    Prepare quiche filling

    • In a medium skillet, heat olive oil over medium heat. Add onions and saute for 5 minutes or until tender and translucent. Add garlic, saute for about 30 seconds or until just fragrant.
    • Add spinach and cook until wilted, approximately 3- 5 minutes. Remove mixture from heat and set aside. * Pro tip: Keep aside a few pieces of spinach, goat cheese and tomatoes for decorating the top of the quiche.*
    • Meanwhile, in a large mixing bowl, whisk eggs and milk until combined. Stir in sun dried tomatoes, goat cheese, rosemary and onion/ spinach mix. Sprinkle with salt and pepper. (note: I find the sun dried tomatoes in oil to provide a salty flavor so I only and a sprinkle of salt and large shake or two of pepper but feel free to add more)

    Assemble & Bake

    • Pour egg mixture into prepared pie crust.
    • If you have set aside a few pieces of spinach, goat cheese and sun-dried tomatoes, place them on top of the mixture to "decorate" the quiche.
    • Cover edges of pie crust with foil so they don't burn while baking.
    • Bake at 350°F for approximately 40-45 minutes in total** or until quiche is golden brown and center set (no longer jiggly and toothpick comes cleanly out of center). **Check quiche at 30-35 minutes. If the top looks like it's browning too much for your taste, cover entire quiche gently with foil for last part of baking.
    • Let sit for 5 minutes before serving.
    • Leftovers heat up well.
