Adapted to be gluten-free and vegetarian from the original recipe on Cooking Light. Can easily be made dairy-free and vegan, depending on the pesto you use, and by skipping the parmesan topping. I used Le Veneziane gluten-free Ditalini pasta.
Loaded with summertime goodness
This Summer Minestrone Soup is always a hit! Loaded with summertime veggies including carrots, celery, leeks, pepper, zuchinni, yellow squash, and green beans, it’s a fair amount of chopping but if you prep that ahead, it’s a quick, nutrient dense dinner. Topped with pesto and Parmesan cheese it’s really tasty!
