This original recipe is on The Toasted Pinenut. It’s simply chickpeas sautéed in avocado oil and mixed with sun-dried tomatoes, toasted pine nuts, avocado and goat cheese. I added a handful or two of I Love Organic Girl mache rosettes greens.

I’d been dreaming of this Sun Dried Tomato Chickpea Salad ever since The Toasted Pinenut posted it on Instagram: it’s all my favorite ingredients, took less than ten minutes to prepare, and it did not disappoint! It was so delicious! The best combo of flavors!
Do my boys eat it, you might ask? Nope. But sometimes, salad and pizza night in our house means the boys eat pizza — and I eat salad! So yummy!
