Sunday Night Dinner meets Asian Feast

Something for everyone..

With everyone’s busy schedule, Sunday night is one of the few nights we are all generally home and eating dinner together, so I like to make a big meal that is crowd pleasing and leaves us extras for the next day or two.  The end of year Spring schedule tends to be even crazier than usual so leftovers are particularly welcome!

Today’s spread is Vegetable lo mein, sautéed bok choy, roasted wasabi tofu, grilled teriyaki chicken, and Ozuke kimchi.  Something for everyone and each dish was quick & easy.

Click here for 15 Minute Lo Mein Recipe from Pinch of Yum.  I used Gluten-free Tamari instead of soy sauce and Gluten-free spaghetti instead of ramen noodles.  For vegetables, I used julienne cut carrots, yellow squash, zucchini, red peppers, and broccoli.

Bok Choy was stir fried quickly in canola oil and garlic, then I added some of the marinade from the Tofu and let it cook an additional few minutes.

Chicken was marinated in Premier Japan Gluten-free Teriyaki Sauce and grilled.

Kimchi is Ozuke brand.
