It’s soup season all year round in my house!
Soup is an simple and nourishing meal that my family loves no matter the weather so we have so many versions we make.
But this Gluten-Free Tortellini Soup is the easiest and fastest ever!
One pot, 15 minutes.
No Chopping Required!
Literally, lunch or dinner is served in the amount of time it takes to bring broth to a boil and cook the tortellini. And it is super yummy and warming!

This gluten-free Tortellini Soup is the easiest and fastest ever! One pot, 15 minutes, then you have a nourishing, satisfying and delicious warming soup! Pro tip: While you can serve it as soon as 15 minutes, we like to let it sit in the pot a little longer for the flavors to really combine.

Ingredients
32 oz box vegetable or chicken broth
28 oz chopped tomatoes (I used Pomi Chopped Tomatoes)
¼ teaspoon dried oregano (or more to taste)
½ teaspoon dried basil (or more to taste)
¼ teaspoon seas salt (or more to taste)
Salt & pepper
12 oz package gluten-free Tortellini (we used DePuma's)
3 cups fresh baby spinach (or more to taste)
Parmagiana cheese for topping
Instructions
In a large pot combine broth, tomatoes, basil, oregano, salt and pepper, and bring to a boil.
Add tortellini (we use DePuma's Gluten Free Pasta) and cook to package instructions
Add fresh spinach and let wilt (You can also use 10oz frozen spinach but put in earlier to dethaw)
