Tropical Mango Salad
Light & refreshing!
Summer has may have officially arrived but it is cool and dreary here so craving my favorite summer salads to give me that summertime feeling 🙂
This Tropical Mango Salad is one of my favorites. Light, refreshing and super yummy. Recipe adapted from The Plantiful Blonde, it’s simply juicy mango, an assortment of fresh tomatoes, avocado and jalapeño tossed with basil, a touch of salt, pepper & EVOO. I forgot to add the jalapeño until after I’d taken this photo, but is a great add if you like a little heat and crunch to contrast the other ingredients!
The best part of this salad is that it’s quite adaptable. You can add more or less of any ingredient you love and subtly change the flavor. Any way you make it, it is like a taste of summer!

Here are the basics, adjust to taste: You can add more or less of any ingredient you love and subtly change the flavor.
- One avocado
- Approximately 1/2 cup mix of tomatoes (this time I used cherry tomatoes, halved)
- 1 fresh mango, peeled and cubed
- 1/2 jalapeño, seeded & sliced (missing from my photo)
- A handful of fresh basil
- Sea salt and pepper and EVOO to taste
