One of my favorite things about summer is simple salads that need very little seasoning because the produce is so fresh and yummy!
This is just one of those salads!
It’s just 5 real, whole food ingredients plus seasoning…mango, tomatoes, avocado, jalapeno and basil.
These ingredients are tossed together and seasoned with Extra Virgin Olive Oil, salt and pepper andit is the best mix!
The sweet and juicy mango balances and pairs so well with the fresh and juicy cherry tomatoes, and creamy avocado. The jalapeño adds some crunch and a little bit of kick (be sure to de-seed them so it’s not too spicy! and add as much or as little as you like) and the fresh basil makes everything taste like Summer!
We first started making this salad after The Plantiful Blonde shared it on Instagram. It was a salad she had enjoyed while vacationing in St Barth’s and now every time we eat it, I get all those summertime and warm weather vibes!
The best part of this salad is that it’s quite adaptable. You can add more or less of any ingredient you love and subtly change the flavor.
Any way you make it, it comes together quickly and is a perfect side salad!

Serves: 2-3 servings
Approximately ½ -1 cup cherry tomatoes
1 fresh mango, peeled and cubed
½-1 jalapeño, seeded & sliced
A large handful of fresh basil, torn or chopped into pieces
1 tablespoon Extra Virgin Olive Oil or more to taste
Sea salt and pepper to taste
Toss all ingredients in a bowl. Drizzle with Olive oil and season with salt and pepper to taste.
