Veggie Bean Burrito Bowl

Simple, Fresh and Delicious!

We are always about quick and easy meals but especially in the week leading up to Christmas, I need meals that are extra fast but still nourishing, satisfying, and delicious!

This Veggie Bean Burrito bowl the perfect weekday, pre-holiday win.  Plain Brown Rice, Quick Simmered Black Beans (seasoned with cumin and chili powder), quickly sautéed peppers and onions, and smashed avocado.  Simple, fresh and delicious.

My husband and I devoured these bowls while the boys ate the rice and smashed avocado along with classic beef tacos.

A quick and easy weekday dinner that's nourishing, flavorful and satisfying. Brown rice, quick simmered black beans, sautéed peppers + onions, and smashed avocado. Bowl inspired by and Quick Simmered Black Beans recipe from Minimalist Baker.

Quick Simmered Black Beans
  • 1 15-ounce can black beans
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • kosher salt to taste (1/8 - ¼ tsp)
Sauteed Peppers + Onions
  • 1 Tbsp olive or grape seed oil
  • 2-3 garlic cloves, minced
  • 1 red, green, orange, or yellow bell pepper, thinly sliced lengthwise (I used ½ red pepper and ½ yellow for more color)
  • ½ red onion, sliced into ¼-inch rings
  • Pinch kosher salt
1-2 cups cooked Brown Rice (or substitute white rice, quinoa or cauliflower rice)
1 ripe avocado
  • Kosher salt to taste
Cilantro and Lime for Garnish
Quick Simmered Black Beans
  1. Add beans including liquid to a small saucepan over medium heat. Stir in spices and bring to a simmer. Let cook for 10-15 minutes, longer if you have time, stirring occasionally.
Sauteed Peppers + Onions
  1. Heat oil in a large skillet over medium-high heat. Add garlic and let cook about 30 seconds or until fragrant. Add peppers and onion and a pinch of kosher salt.. Sauté, stirring frequently, until tender/ crisp, about 5 minutes.
Smashed Avocado
  1. Cut the avocado in half. Remove pit and use a spoon to scoop the avocado out and into a small bowl.
  2. Mash avocado with the tines of a fork and season with salt to taste. I like to leave avocado a little chunky
  1. In each bowl, place rice, beans, sautéed veggies and avocado. Garnish with cilantro and lime.
