Arugula Salad with Lemon Vinaigrette

This Arugula Salad with Lemon Vinaigrette and shaved Parmesan is the easiest and tastiest side salad!

- arugula - extra virgin olive oil - lemon juice - shaved Parmesan - salt and pepper

This salad comes together in less than 5 minutes. The only preparation is making the Lemon Vinaigrette.

The Lemon Vinaigrette is just 2 ingredients! Fresh lemon juice, extra virgin olive oil.

All you do is vigorously whisk the lemon juice and olive oil together until well combined and emulsified — it will be thicker and creamier when combined.

Season with salt and pepper and toss with the arugula!

Top with freshly shaved parmesan and serve!
