Chocolate Chickpea Blondies

A beyond yummy, decadent tasting chocolate chip blondie! No one will guess it is made with chickpeas or that it is naturally gluten-free and grain-free!

INGREDIENTS

– Chickpeas – Vanilla Extract – Almond Butter – Eggs – Brown Sugar

In a stand mixer bowl, mix chickpeas for 4-5 minutes or until well mashed, combined and almost paste-like.

Add butter and almond butter and mix to combine. Add in eggs and mix to combine.

Mix in brown sugar and vanilla. Add in baking powder, baking soda, salt and chickpea flour if using.

Stir in 3/4 cup chocolate chips. Spoon into prepared pan, spread evenly. Top with chocolate chips. Bake 28-30 minutes or until a toothpick comes out clean.

Let cool in pan for 45 minutes or more. Lift entire parchment paper and transfer to cutting board. Cut into 16 squares. Enjoy!
