Crispy Gluten-Free Vegetable Fritters

Crisp on the outside, irresistibly light + fluffy on the inside, packed with vegetables and so flavorful... these are everything you want in a Gluten-Free Vegetable Fritter!

- gluten-free flour - corn  - zucchini - carrot - egg - milk

The first thing to do is shred the zucchini and carrots. Grating the zucchini is always the first thing I do so that the zucchini can sit and release some of its water.

Mix together the flour and baking powder.

Add in the egg & milk.

Stir in the remaining ingredients – salt, pepper, garlic, corn, zucchini and carrots.

Once the batter is mixed together, you just cook them in hot olive oil for about 5 minutes each side.
