Gluten-Free Lemon Strawberry Bread

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, whisk together sugar, melted butter, yogurt, eggs, lemon juice, lemon zest, and vanilla until well combined.

Mix the flour mixture into the wet mixture until thoroughly combined and no lumps remain, about 1 minute.

Gently fold in the strawberries until evenly distributed. Cover the bowl with plastic wrap and let the batter rest at room temperature for 20 minutes (no longer than 30 minutes).

After 20 minutes, spoon the batter into the loaf pans and spread it evenly. Top with extra strawberries if desired, and sprinkle turbinado sugar over the top.
