A peanut butter lovers dream! A homemade + gluten-free take on the classic, they are two soft & chewy peanut butter cookies with a creamy peanut butter filling sandwiched between them.

Mix the butter and sugars until really well creamed.

Beat in the eggs, and then the peanut butter.

Separately combine the flour, baking soda, baking powder and salt with a whisk or pastry cutter.

Add dry ingredients to the wet ingredients and the batter is done!

After chilling the batter for just 10-15 minutes so that it is easier to roll, roll the dough into teaspoon size balls.
