Cookie base: Mix together almond flour, gluten-free oats, flax egg, salt, and maple syrup in a stand mixer. Press into a bread pan and baked for 20 minutes.

Caramel filling: Add the dates to a food processor and process until smooth.

Add remaining ingredients and process until well combined.

And it is spread on top of the cooked cookie base, then placed in the freezer to set.

Chocolate coating: Using a double boiler, melt coconut oil and chocolate chips. Pour over frozen bars and put back in the freezer to set.
