Rhubarb Coffee Cake

Prepare the cinnamon sugar crumble by combining all ingredients in a small bowl and setting aside.

Cream the butter and brown sugar until well combined. Mix in the egg. Add vanilla and mix to combine.

Combine flour, salt, & baking soda in a medium bowl and mix with a pastry cutter, whisk, or fork.

Add the flour mixture and sour milk alternately to the butter, sugar, and egg mixture until well blended. Stir in rhubarb.

Pour into the prepared pan and spread evenly. Sprinkle the crumble topping on top of the cake batter.
