Salmon Cobb Salad

A twist on the classic Cobb Salad, this is a gluten-free salad that is truly a meal! It's a simple combination of ingredients that together are an amazing mix of flavors and textures in every bite!

- salmon - flake unsweetened coconut - virgin olive oil - red white vinegar - lemon juice

Ingredients:

This main dish salad is versatile, customizable, and always so tasty and satisfying! Equally perfect for a weekday dinner or entertaining.

Generously coat both sides of the salmon in olive oil and place on the prepared baking sheet. Season generously with salt and pepper.

Bake on the middle rack for 15 minutes, or until the salmon is tender. It will be flaky when sliced with a fork.

Mix oil, tamari, paprika, maple syrup, liquid smoke, sea salt, and black pepper in a medium bowl. Add the coconut flakes. Toss/stir to thoroughly coat. Place coated coconut flakes on the prepared baking sheet.

Bake for 6 minutes, then remove from the oven and stir. Bake for an additional 5-7 minutes, or until the coconut bacon is crispy and golden brown.

Whisk all ingredients in a liquid measuring cup or small bowl until well combined.
