Zucchini Fritters

A quick + easy zucchini recipe (less than 30 minutes) that satisfies that craving for something savory, warm, and ready. A perfect side dish or snack!

– zucchini – eggs – green onion – herbs – all purpose flour with xanthan gum

Ingredients:

Grate zucchini, toss with 1 teaspoon salt and let sit for 10 mins while you gather your other ingredients.

Add all ingredients (including the grated, drained zucchini) to a large bowl, and with a large spoon, mix to combine until the flour is absorbed.

In a large non-stick skillet, over medium heat, add 1-2 tablespoons of olive oil.

Drop batter in large spoonfuls (I use a cookie scoop or approximately 1/3 cup) onto hot oil to make 8 fritters.

Remove from pan and place on a baking rack with a paper towel underneath to stay crispy.
