Flourless Chocolate Chip Cookie Bites
The yummiest healthier, flourless chocolate chip cookies! They are so decadent tasting and delicious that no one will guess they are also packed with nourishing ingredients. Super quick and easy recipe! 15-20 cookies depending on how big you roll them.

1 cup gluten free rolled oats we use GF Harvest (affiliate link) 2 tablespoons flax seeds 3 tablespoons hemp seeds 2 tablespoons chia seeds 1 cup shredded coconut we used Let's Do Organic (affiliate link) 1 16oz jar almond butter OR any nut/ seed butter of choice we used Barney Butter (affiliate link) ¼ cup maple syrup ⅔ cup mini semi-sweet chocolate chips we used Enjoy Life Chips (affiliate link)
Preheat oven to 350 degrees F and line a baking tray with parchment paper, set aside. In a large bowl, mix all the dry ingredients -- coconut, oats, chia seeds, hemp seeds, flax seeds and chocolate chips. Add almond butter and maple syrup and using a large spoon, mix until well combined. Roll into approximately 2 inch balls (larger or smaller to taste), place on prepared baking sheet and bake 10 minutes. They will be just golden on the edges and bottom. Let cool for about 10 minutes and enjoy!*
* they will continue to set as they cool.
* when complete cooled, store in a sealed container for a week or freezer for 3 months.
