How to make Crispy Gluten-Free Zucchini Fritters
What you need:
gluten-free flour (we use GFJules – affiliate link)
zucchini
2 eggs
green onions
garlic
baking powder
salt and pepper
fresh herbs such as chives, dill and/ or basil (use what you love!)

A note about herbs for these Crispy Gluten-Free Zucchini Fritters
There is nothing like fresh herbs to add flavor and nutrients to any dish.
We love using them in baking, cooking and as garnish when plating a dish.
In this gluten-free zucchini fritter recipe, we always use scallions, also known as green onions, but leave it up to you as to what herbs you add because it does impact the flavor.
I happen to love dill but dill has a strong flavor so when you add even a tablespoon of dill, it is noticeable to someone that doesn’t love dill.
Because some in my family don’t love dill, we tend to make them mostly with chives and basil. Feel free to try them with a variety of herbs and see what you love!
How to make Crispy Gluten-Free Zucchini Fritters
This gluten-free recipe is simple and quick, coming together in 3 simple steps.
The first thing to do is grate your zucchini, toss with salt and let it sit for 10 minutes (or more), and then squeeze out excess water. Especially if the zucchini is fresh, sometimes you will squeeze out a lot of water! This is an important step in keeping your fritters crispy and not soggy.
Then you add all the ingredients to a large mixing bowl, and with a spoon (yes, this is one of those recipes I do by hand!), mix until all of the flour is absorbed and no longer visible.
Let the batter sit for 5 minutes, then it’s time to cook them!
The batter will make 8 large fritters, so I often cook them in batches.
And I simply saute them with a little olive oil, cooking 4 minutes a side so that they are crispy and golden on the outside, soft and tender on the inside.
When we take them off the pan, we let them cool for a minute or two on a baking rack, with paper towels underneath to absorb any excess oil, so that they stay extra crispy.
Take a look on the inside...
They are soft, tender and packed with zucchini but not soggy or mushy at all!
Serve as is or top with a dollop of sour cream or Greek yogurt, or garnish with extra herbs. However you serve them, they are delicious!
Storing: Extras stay will the refrigerator for several days. Enjoy cold, at room temperature or reheat in a microwave or skillet.

1lbzucchini, grated approximately 2 medium zucchini or 3 cups grated, loosely packed;
2largeeggs, whisked
¾cupgluten-free all purpose flour with xanthan gumwe use GF Jules -- affiliate link
½cupgreen onion, chopped white and green parts
¼cupfresh herbs such as chives, basil, dillDill has a strong flavor so if you use, I recommend 1 tablespoon. My family loves the fritters with just chives and basil (I do 2 tablespoons of each)
¼teaspoonpepper
½teaspoonsalt
1clove garlic, minced
½teaspoonbaking powder
¼cupParmesan cheese
olive oil for frying
Instructions
Grate zucchini, toss with 1 teaspoon salt and let sit for 10 mins while you gather your other ingredients. After 10 minutes or longer, squeeze out excess water using your hands or a cheese cloth. Really squeeze well, there will be a lot of water and you want to remove excess water so the center of the fritters aren't soggy.
Add all ingredients (including the grated, drained zucchini) to a large bowl and with a large spoon, mix to combine until the flour is absorbed. Let batter sit for 5 minutes. Note: this is a recipe I do by hand, not with a mixer.
In a large non-stick skillet, over medium heat, add 1-2 tablespoons of olive oil (enough to cover the bottom of the pan) and heat until shimmering (not burning). Drop batter in large spoonfuls (I use a cookie scoop or approximately 1/3 cup) onto hot oil to make 8 fritters. (I tend to do them in two batches). Use a spoon or your hand to gently flatten and shape them as needed, cook 4 minutes each side or until golden and crispy. The fritters are basically sauteed, not deep fried, so add more oil as needed when you flip them.
Remove from pan and place on baking rack with paper towel underneath to stay crispy.
Serve as is, with a dollop of sour cream or Greek yogurt, or top with extra herbs. Enjoy!
Any extras stay well in the refrigerator in a sealed container. Enjoy leftovers cold, room temperature or reheat in the microwave or skillet.
